Wiltshire's are renowned for the quality of their meat, which is generally light in texture, fine grained and lean and tender with excellent flavour. The lamb carcasses are high yielding with consistent dressing percentages around 50%. The quality of the meat is shown by results in carcase competitions where Wiltshire's have had the best dressing percentages, highest yield and largest eye muscle area. Byarlea stud has achieved good results in such competitions (pictured above). We recently had 5 wether lambs killed at our local butcher at The Brook Meat Store in Crystal Brook. His comments on the carcasses were:
